Ingredients

2 to 2.5 cups of bajra flour

1 teaspoon oil or ghee

water as required

salt as required

some bajra flour or whole wheat flour for dusting

canola oil for frying 

ghee for applying on the roti

Instructions

  • Heat the water, add salt and oil.
  • Add bajra flour and stir with a spoon. Knead into a smooth dough. 
  • If the dough is dry, add some water and if the dough is sticky, add some more flour. 
  • Meanwhile, heat the tawa.
  • Make medium-sized balls, dust with flour and use a ziplock bag for rolling.
  • Remove gently from the ziplock bag and place bajra roti on the hot tawa. 
  • Cook till both sides have brown spots

Ingredients

Tomatoes 10-12 medium

Garlic 4 cloves

Carrot ½ medium

Onion 1 medium

Basil leaves a few

Sugar 1 teaspoon 

Oil ½ teaspoon

Butter 1 tablespoon

Bay leaf 1

Peppercorns 4-6

Salt to taste

Peppercorns crushed ½ teaspoon

Method:

Wash and cut tomatoes into quarters. Peel, wash and chop garlic, carrot, onion and basil leaves. Heat oil and butter in a pan. Add bay leaf, peppercorn, sliced onions and sauté till translucent.

Firstly, add chopped garlic and stir, then add carrot roundels and tomatoes, stir fry for a minute and add three cups of water. Cook for ten to fifteen minutes covered with a lid. Strain the blended mixture through a strainer and reserve the liquid. Remove peppercorns and bay leaf and allow it to cool. 

Blend in a mixer to get smooth puree and strain it. Adjust the consistency by adding reserved liquid to the pureed tomatoes. Put it back on the heat. Add salt, freshly crushed peppercorns and let it simmer for a few minutes. Add the basil leaves just before serving.
